Quick coleslaw with red cabbage

Ingredients for 1 servings:

  • 1 carrot(s)
  • 1 onion(s), red
  • ¼ red cabbage
  • 1 tbsp salt
  • 1 tbsp apple cider vinegar
  • 1 tbsp lime juice
  • 1 tsp raw cane sugar
  • 1 tsp soy sauce
  • 1 tsp pepper
  • ¼ tsp cayenne pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Total time approx. 30 minutes

Perfect with burgers, wraps & co

Shred the carrot, onion, and red cabbage in a blender or food processor and mix with the salt in a bowl. Transfer to a colander and let the water drain for 20 minutes. Combine the dressing ingredients and mix with the drained cabbage in a bowl. Press into an airtight container, leaving as few gaps as possible, and let it marinate in the refrigerator. The coleslaw can be eaten immediately, but tastes better if it marinates longer.
