Quick crispy duck on grilled vegetables

Ingredients for 2 servings:

  • 300 g duck(s), boneless, seasoned and pre-cooked
  • 3 m.-sized potatoes
  • 1 bell pepper(s), red
  • 1 m.-large zucchini
  • 1 onion(s)
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp thyme, dried
  • ½ tsp oregano, dried
  • 1 sprig of rosemary, fresh
  • 1 tsp salt, coarse
  • some pepper, freshly ground

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Peel the potatoes and cut into approximately 1 cm cubes. Peel the zucchini, halve it, and cut it into approximately 1 cm wide strips. Peel the onion and cut it into eighths. Dice the bell pepper. Pour the oil into a bowl, add the chopped garlic along with all the spices, salt, and rosemary, and mix everything briefly. Add the vegetables and mix everything together. Place the vegetables in the air fryer and place the crispy duck on top. Cook at 180°C for a total of 20-25 minutes. Since the duck is pre-cooked “at the factory,” it and the vegetables will have the same cooking time, resulting in a delicious dish. This recipe can, of course, also be prepared in the oven instead of the air fryer. However, in the air fryer, the cooking liquid and the duck fat will drip to the bottom. This keeps the dish low in fat, and the vegetables are grilled perfectly.
