Quick gooseberry cake

Ingredients for 1 servings:

  • 600 g gooseberries, possibly from the can
  • 165 g sugar
  • 90 g margarine, semi-skimmed
  • 1 egg(s)
  • 260 g wheat flour
  • 2 tsp baking powder
  • 125 ml milk, low-fat

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

WW suitable

Wash and hull the gooseberries. Then toss them with 1 tablespoon of sugar and let them stand. Preheat the oven to 170°C. Beat 85g of semi-skimmed margarine with the remaining sugar and the egg until fluffy. Mix the flour with the baking powder and stir in well, alternating with the milk. Grease a 26cm springform pan with the remaining margarine. Pour the batter into the greased pan. Spread the gooseberries on top and bake in the preheated oven at 170°C (top/bottom heat, gas mark 2, fan oven: 150°C) on the middle rack for approx. 50-60 minutes.
