Quick leek soup

Ingredients for 2 servings:

  • 1 onion(s)
  • 4 tbsp oil
  • 2 stalk(s) leeks
  • 250 g potatoes
  • 500 ml vegetable stock
  • Salt
  • pepper
  • Thyme
  • nutmeg
  • 150 g crème fraîche
  • 2 eggs, including the yolk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the onion, then add the leek in thin strips to the onions. Dice the potatoes and sauté with the vegetables. Add the broth and bring to a boil. Season and simmer for 20-25 minutes. Purée the soup and pass it through a sieve. Combine the crème fraîche and egg yolk and add to the soup. Season to taste.
