Quick lentil salad with mango

Ingredients for 2 servings:

  • 1 can of lentils
  • 1 mango(s), fresh or frozen
  • 1 bell pepper
  • 1 handful of arugula
  • 1 tsp oil
  • 1 tbsp balsamic vinegar
  • 1 tsp, levelled honey
  • 1 tsp, leveled mustard
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

WW-suitable

Drain a can of lentils. Wash and dice the red bell pepper and dice the mango, or use the frozen version. Add both to the lentils. Make a dressing with oil, vinegar, honey, mustard, salt, and pepper and pour it over the salad. Mix everything well and add some arugula, if desired. The frozen mango keeps the salad nice and fresh, making it ideal for takeout.
