Quick low-carb pizza

Ingredients for 1 servings:

  • 2 eggs
  • 200 g cauliflower
  • possibly ham
  • possibly mozzarella
  • 2 tbsp tomato paste
  • 50 g tomatoes, chopped from the can
  • 1 tsp oregano
  • ½ garlic clove(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

For the pizza base, finely grate the cauliflower and mix it with the two eggs until it forms a paste. Spread this mixture onto a piece of baking paper (about 0.5 cm – 1 cm thick) in a pizza pan. Bake the base at 220°C for 15 – 20 minutes, until the top is golden brown. For the pizza sauce, mix the tomato paste, half a garlic clove, oregano, and chopped tomatoes well and spread on the golden-brown pizza base. If desired, you can then top the pizza with mozzarella, ham, or similar ingredients. Return to the oven for another 10 minutes. Tip: The pizza will probably stick to the baking paper. To loosen it, turn it over with the baking paper on it, and the baking paper can be easily removed.
