Quick Mediterranean-style couscous salad

Ingredients for 4 servings:

  • 2 cup(s) couscous, instant
  • 3 cup(s) water, hot
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 100 ml broth
  • 5 tomatoes, dried, preserved in oil
  • salt and pepper
  • e.g. parsley
  • 1 m.-sized onion(s)
  • n. B. Ham, diced

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

with dried tomatoes

Place 2 coffee cups of couscous in a bowl and add 3 coffee cups of hot water. Let it stand for 10 minutes. Finely chop the onion and add it to the couscous along with the olive oil, balsamic vinegar, and broth. Mix thoroughly. Then dab some of the oil off the pickled sun-dried tomatoes and dice them. Roughly chop the parsley, add both to the bowl, and mix well. Season with salt and pepper. If desired, add diced ham, for example. Let stand for about 1 hour and adjust the seasoning if necessary.
