Ingredients for 2 servings:
- 14 heads of mushrooms, fresh
- 16 cocktail tomatoes
- 1 ball of mozzarella
- 2 tbsp basil, fresh, chopped
- 1 clove(s) garlic or garlic powder
- salt and pepper
- olive oil

Lightly grease two single-serving baking dishes with olive oil and rub half a garlic clove into each. Trim the mushrooms, pierce the cherry tomatoes a few times with a toothpick, and divide both between the dishes. Peel and finely chop the garlic halves, and arrange them on top. Place the sliced mozzarella on top. Season with basil, salt, and pepper, and drizzle with a little olive oil. Bake in a preheated oven at 200°C for about 15 minutes, until the cheese is nicely melted. Serve with baguette, ciabatta, or fresh rolls.
