Grilled mussels

Ingredients for 2 servings:

  • 500 g mussels (mussels), fresh
  • 5 tbsp water
  • 3 tbsp butter, melted
  • 2 tbsp olive oil
  • 4 tbsp Parmesan, grated
  • 3 tbsp parsley, fresh, chopped
  • 3 garlic cloves, finely chopped or pressed
  • ½ tbsp black pepper, ground

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean the mussels thoroughly. Then, cover with water and steam in a large pot until the mussels open. Drain and remove the top shells (discard any closed mussels!). Place them in a casserole dish or baking sheet, close together so they won’t tip over. Preheat the grill to high. In a bowl, combine the butter with olive oil, Parmesan cheese, parsley, garlic, and black pepper. Place a small mound of this cheese mixture on each mussel. Grill in the oven for 3-4 minutes, until the mussels are sizzling and golden brown. Serve with baguettes and lemon wedges. Note: If using frozen greenshell mussels, rinse them with cold water, thaw, and grill them at 180°C for about 7 minutes.
