Ingredients for 3 servings:
- 1 medium-sized onion(s), diced
- 1 garlic clove(s)
- 100 g cooked ham, cut into small strips
- 1 bell pepper(s), red, diced
- 1 small tomato(s), diced
- 2 tbsp corn
- 2 tbsp peas, frozen
- 1 small zucchini, thinly sliced
- 250 ml vegetable stock
- 150 ml cream
- 2 tbsp tomato paste
- 1 ½ tbsp herbs, e.g. parsley or 8-herb mixture
- salt and pepper
- possibly herbs of Provence
- olive oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
with leftovers from the vegetable drawer
Sauté the onion and garlic in olive oil until translucent. Add the zucchini, season with salt and pepper, and fry lightly. I like to sprinkle some Provençal herbs on the zucchini. Add the cooked ham and bell peppers and braise for about 2 minutes. Add the vegetable stock and cream and simmer gently. Add the tomato paste and stir into the sauce. Add the herbs and season with salt and pepper, if desired. Thicken the sauce further if desired. Add the corn and tomatoes just before serving. We like to eat this sauce with fresh tortelloni. Tip: The vegetables can be varied.
