Quick soba pak choi stir-fry

Ingredients for 2 servings:

  • 125 g soba noodles
  • 200 g pak choi
  • 2 tsp coconut oil
  • 2 tbsp sesame seeds
  • Salt

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Melt the coconut oil in a large pan. Heat 2 liters of water in a kettle. Place a medium-sized pot with a little water on the stove. Wash the bok choy, trim the ends, and quarter or sixth the rest lengthwise using a sharp knife. Fry in the hot coconut oil, stirring frequently. When the water in the kettle is boiling, pour it into the pot, season generously with salt, and cook the noodles for about 4 minutes until al dente. Drain the noodles, rinse with cold water, drain well, and add to the pan with the bok choy. Mix everything together. Divide the bok choy noodles between two plates and top each with a tablespoon of sesame seeds. Delicious! I like to make this recipe after work when I’m craving something fresh and warm, but don’t have much time or inclination to cook.
