Ingredients for 4 servings:

  • 400 g sausage (ham, meat, poultry), sausages, ham, mettwurst or kabanossi
  • 2 onions
  • 3 tbsp tomato paste
  • 2 cubes of soup
  • 5 cucumber(s), sour
  • 2 tbsp capers
  • 2 bay leaves
  • Oil, for frying
  • salt and pepper
  • Olives, black
  • Sour cream
  • lemon(s)
  • Parsley

delicious way to use leftover sausage

Be sure to use several different types before adding the sausage, otherwise it won’t taste good! Thinly slice or dice the sausage. Finely chop the onion. Brown the sausage and onion in a pan with a little oil, add tomato paste. Bring water to a boil, add the sausage and onion mixture, and simmer for 10 minutes. Thinly slice the cucumber (you can also halve the slices if necessary), add to the pot, add capers, salt, bay leaves, and stock cubes, and simmer covered for another 15 minutes. When serving, add a few black olives, 1 tablespoon of sour cream, a thin slice of lemon, and some chopped fresh parsley to each plate.
