Quick sponge cake for fruit cake

Ingredients for 1 servings:

  • 3 m.-sized eggs
  • 70 g wheat flour
  • 30 g starch flour
  • 1 pinch of baking powder
  • 90 g sugar, fine
  • 1 tbsp Bourbon vanilla sugar, real

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Preheat the oven to 190°C. Line a baking rack with nonstick baking paper and place a 30 cm cake ring on it. Now, for the batter, beat the eggs with sugar and vanilla sugar in a food processor until very fluffy. Combine the flour, cornstarch, and baking powder and sift them into the egg mixture, then lightly fold in with a whisk. Immediately pour the mixture into the cake ring and smooth it down. Bake at 190°C for approximately 12-15 minutes. Do the toothpick test! This amount of batter is enough for one fruit cake base and yields 16 slices.
