Quick tomato sauce for Spaghetti Napoli

Ingredients for 4 servings:

  • 2 tubes of tomato paste
  • 1 large onion(s)
  • 1 m.-sized carrot(s)
  • 1 bunch of Italian herbs (e.g. basil, rosemary, thyme …), mixed
  • salt and pepper
  • n. B. Vegetable broth to fill
  • 1 clove(s) garlic

Working time approx. 15 minutes; Total time approx. 15 minutes

inexpensive, fast and delicious

Finely dice the onion, chop or press the garlic. Finely grate the carrot. Sauté the onions in a little olive oil until translucent, add the carrots, and cook for about 1 minute. Then add both tubes of tomato paste to the oil and fry for 2-3 minutes. Now add the garlic and herbs, and top up with the broth until the desired consistency is reached. Season with salt and pepper. Tastes best with spaghetti and Parmesan cheese. A favorite in my family when things are in a hurry!
