Quick turkey fricassee

Ingredients for 4 servings:

  • 600 g turkey breast, cut into bite-sized pieces
  • 300 ml chicken broth, preferably from a jar
  • 150 g peas, fresh or frozen
  • 1 jar white wine
  • 2 tbsp capers
  • 1 cup of cream
  • 1 medium-sized onion(s), cut into large cubes
  • some fat
  • some flour
  • salt and pepper
  • Paprika powder, sweet

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Heat the fat in a large, high-sided pan, brown the turkey, season with salt and pepper, add the onions, and sauté. Dust with 1-2 tablespoons of flour and sauté. Deglaze with the white wine, stir well, and after about 1 minute, stir in the broth. Simmer everything over medium heat for 10-15 minutes. Then add the peas, capers, and cream and simmer for another 15 minutes. Serve with rice, pasta, or potatoes.
