Ingredients for 4 servings:

  • 6 tbsp olive oil
  • 2 onions
  • 4 cloves garlic
  • 1 ½ kg vegetables, various, e.g. zucchini, potatoes, carrots, broccoli, peppers, beans, kohlrabi, tomatoes, rose
  • 4 tbsp tomato paste
  • 1 liter broth, ready
  • 2 tsp oregano
  • 3 tsp basil paste
  • salt and pepper
  • chives

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Heat the oil in a large pot, sauté the onion (sliced ​​into rings) and crushed garlic until translucent. Add the cleaned and roughly diced vegetables and sauté for a few minutes. Add the tomato paste and top up with the stock. Simmer over moderate heat for about 25 minutes, stir in the oregano and basil paste, simmer for another 5 minutes, and season with salt and pepper. Sprinkle with freshly chopped chives to serve. Serve with baguette or ciabatta. For all meat lovers: you can also add 250g of seared minced meat. But this soup is delicious without it too!
