Quick vegetable stir-fry

Ingredients for 4 servings:

  • 2 onions
  • 400 g carrot(s)
  • 700 g pointed cabbage
  • 250 g mushrooms, fresh
  • 2 tbsp oil
  • 100 ml vegetable stock
  • 150 g crème fraîche
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

simple but delicious

Peel the onions, halve them, and cut into strips. Peel the carrots, wash them, and cut them into diagonal slices. Trim the pointed cabbage, wash them, and cut them into wide strips. Trim the mushrooms. Heat the oil in a large pan. Fry the onion and carrots for about 2 minutes. Add the mushrooms and cook for another 2 minutes. Add the cabbage to the pan and cook for about 3 minutes. Deglaze with stock, cover, and cook for about 5 minutes. Season with salt and pepper and stir in the crème fraîche. Serve with toasted white bread.
