Quick zucchini and rice pan

Ingredients for 4 servings:

  • 2 bags of brown rice or regular rice
  • salt water
  • 1 m.-large zucchini
  • 1 m.-sized onion(s)
  • 4 slices of ham
  • 2 carrots
  • 1 garlic clove(s)
  • n. B. Herbs of your choice (e.g. lovage, basil, parsley, chives…)
  • 2 tbsp olive oil
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the rice in salted water according to the instructions, then drain well. While the rice is cooking, wash the zucchini and dice it finely. Peel the onion and garlic and dice them finely, as well as the carrots. Dice the ham finely. Roughly chop the herbs. Heat the olive oil in a pan and sauté the onions, garlic, and ham. Then add the zucchini and carrot cubes and sauté. Add the rice to the pan and mix everything together. Finally, add the herbs and season to taste with salt, pepper, and a little paprika.
