Ingredients for 4 servings:
- 400 g quince(s)
- 1 shallot(s)
- n. B. Chili pepper(s), red
- ½ bunch parsley
- 3 tbsp cranberries, dried
- 150 ml apple juice
- n. B. sugar
- e.g. salt and pepper
- some vegetable oil

First, peel the shallot and finely dice. Next, halve the chili pepper lengthwise, remove the seeds, and also finely dice. Peel and core the quince, and also dice it. Wash and finely chop the parsley. Add a little oil to a pot or pan and heat. When the oil is hot, add the diced quince and sauté for two to three minutes. Next, add the diced shallots and cranberries and sauté briefly. Now add the chili and sugar and let them caramelize slightly. Then deglaze with the apple juice. Simmer gently until the quince is tender and the mixture has a creamy consistency.
