Quinoa-banana patties

Ingredients for 2 servings:

  • 150g quinoa
  • 300 ml water
  • 15 g hazelnuts, ground
  • 1 tsp turmeric
  • 2 tbsp vanilla sugar
  • 25 g cornstarch
  • 2 large bananas
  • Margarine for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Bring the water to a boil in a sufficiently large pot. In the meantime, weigh the quinoa, pour it into a fine-mesh sieve, and rinse it under hot water to remove any bitterness and empty pods. Now slide the quinoa into the boiling water, reduce the heat so that it is just simmering, and let it simmer for about 15 minutes. The water should be gone after this time. In the meantime, weigh the hazelnuts and cornstarch. Mash the peeled bananas in a bowl. After 15 minutes, leave the mixture in the pot and let it cool slightly. Now mix in the bananas, followed by the cornstarch, the hazelnuts, and finally the spices. Heat the margarine in a frying pan and let it melt. Using a tablespoon, drop small heaps of the mixture into the hot pan and fry on both sides. I always like to eat it with compote.
