Breaded semolina slices

Ingredients for 4 servings:

  • 200 g soft wheat semolina
  • ¾ liter of milk
  • 20 g butter
  • 1 tbsp sugar
  • 1 pinch of salt
  • 1 egg yolk
  • Flour for breading
  • 1 egg(s), beaten, for breading
  • Breadcrumbs for coating
  • 20 g clarified butter for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Like Grandma’s…

Bring the milk to a boil with butter, sugar, and salt. Stir in the semolina and let it swell. Finally, stir in the egg yolk. Spread the finished semolina porridge about 1.5 cm thick on a baking sheet rinsed with cold water. Once cooled, cut into squares or triangles, coat in flour, and coat with egg and breadcrumbs. Fry in clarified butter. Serve hot or cold with compote or applesauce.
