Quinoa pancakes

Ingredients for 1 servings:

  • 75 g quinoa (quinoa flour)
  • 1 banana(s)
  • 200 ml water
  • 1 tsp baking powder
  • 1 pinch(s) cinnamon powder
  • 1 vanilla pod(s), pulp
  • some oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Egg-free, dairy-free, gluten-free

If you don’t have quinoa flour, you’ll need to prepare it as thoroughly as possible. The best way to do this is to rinse the quinoa thoroughly with water the day before to remove any bitterness, and then let it dry on a plate, for example. Once the quinoa is dry, you can grind it as much as you can in a blender or food processor until it has a flour-like consistency. Mix the ground quinoa with the baking powder, cinnamon, vanilla, banana, and water in a food processor until it forms a creamy mixture. For the first pancake, heat a little oil in a pan and fry slowly over medium heat until small bubbles form on top, then turn. You won’t need any more oil for the remaining pancakes. The amounts above are enough for about four medium pancakes.
