Ingredients for 4 servings:
- 200 g black quinoa
- 1 avocado(s)
- 100 g arugula
- 200 g cherry tomatoes
- 200 g shepherd’s cheese
- 3 spring onions
- 10 tbsp olive oil
- 7 tbsp Aceto balsamico, white
- 1 garlic clove(s)
- 1 tbsp honey
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Rinse the quinoa under cold water. Bring 500 ml of salted water to a boil, add the quinoa, and simmer gently for about 15 minutes, until the water is absorbed. In the meantime, prepare and chop the other ingredients. Place the cooled quinoa in a bowl and toss with the prepared vegetables and cheese. For the dressing, combine the oil with the balsamic vinegar, honey, garlic, salt, and pepper. Pour over the salad and toss to coat.
