Quinoa salad with feta

Ingredients for 2 servings:

  • 75g quinoa
  • 2 large tomatoes
  • ½ cucumber(s)
  • 2 spring onions
  • 4 sprigs of parsley
  • 2 sprigs of mint
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 100 g feta cheese
  • 150 g natural yogurt
  • 2 tbsp salad seed mix
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Rinse the quinoa in a sieve with cold water and drain. Bring to a boil in a saucepan with 200 ml of salted water and cook with the lid on over medium heat for about 20 minutes, until the liquid is almost completely absorbed. Allow the quinoa to cool. Cut the tomatoes into small cubes, halve the cucumber lengthwise, remove the seeds with a teaspoon, and also chop finely. Slice the spring onions into small rings, and roughly chop the parsley and mint. Mix the quinoa with the lemon juice and olive oil. Fold in the tomatoes, cucumber, spring onions, and herbs. Season with salt and pepper. Crumble the feta cheese and fold it into the salad along with the yogurt.
