Vegetarian Linguine Carbonara

Ingredients for 4 servings:

  • 100 g Parmesan
  • 100 g onion(s), finely chopped
  • 100 g carrot(s), finely chopped
  • 1 small zucchini
  • olive oil
  • 1 tsp salt
  • 400g linguine
  • 1 pinch(s) of pepper
  • 50 g cream
  • 2 egg yolks
  • 50 g yogurt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Sauté the onions and carrots in olive oil for about 5 minutes, then add the sliced ​​zucchini. Sauté for another 5 minutes. Season with salt and pepper. Meanwhile, cook the linguine in salted water. When the vegetables are tender and the linguine is cooked, skim off some of the pasta water and drain the pasta. Mix the egg yolks with the cream. Grate the Parmesan cheese. Now add the pasta to the vegetables, add the cream and egg yolks, then the yogurt and Parmesan cheese. Mix everything well. Serve hot.
