Quinoa with pineapple and ginger

Ingredients for 1 servings:

  • ½ cup quinoa
  • 1 cup water
  • ½ tsp vegetable broth, instant
  • 1 onion(s)
  • 1 clove(s) garlic
  • Ginger, fresh, thumb-sized
  • Raisins
  • 1 pinch of chili powder
  • 1 tsp curry
  • 2 slices of pineapple
  • Soy sauce

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, rinse the quinoa with water. Pour hot water over the raisins and let them soften slightly. Cook the quinoa in water and vegetable broth with chili and curry, and let it swell. Just before the end of the cooking time (after about 15 minutes), sauté the onion, garlic, and grated ginger. After 5 minutes, stir in the quinoa (which will have softened by now) and raisins. Add the chopped pineapple slices. Season with soy sauce (no salt).
