Ingredients for 4 servings:
- 300 g rabbit meat, fried
- 2 eggs (optional)
- 1 tbsp capers
- 3 anchovies (or anchovy paste)
- 1 m.-sized onion(s)
- 2 gherkins (even better: pepper gherkins)
- 1 tbsp mustard, medium hot
- 3 tbsp oil, neutral
- salt and pepper
- Vinegar
- Sugar
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes

Mix together a marinade of mustard, oil, a little vinegar, some sugar, salt, and pepper. Stir in the finely diced onion, finely chopped anchovies, capers, and the thinly sliced rabbit meat. Let it marinate well. Finally, fold in the sliced cucumber and eggs. This salad also works well with poultry.
