Ingredients for 4 servings:

  • 6 eggs
  • 100 g sausage (cooked salami)
  • 100 g cheese (e.g. Gouda or Edam)
  • 250 g smoked fish (mackerel or bloater)
  • 2 tbsp butter or margarine
  • 2 tbsp oil
  • 2 tbsp vinegar (wine vinegar)
  • Salt
  • pepper
  • Garlic salt
  • chives

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with smoked fish

Combine the eggs, plenty of finely chopped chives, salt, and pepper in the butter until stiffly scrambled. Let cool. Combine the vinegar and oil, season with a little salt, pepper, and garlic salt, and marinate fine, not-too-long strips of sausage and cheese, along with the shredded fish, in this marinade. Finally, fold in the coarsely chopped scrambled eggs. Tastes great with toast or brown bread.
