Ingredients for 1 servings:

  • 500 g flour
  • 1 tsp sugar
  • 1 cube of yeast
  • 6 tbsp milk
  • 125 g butter
  • 125 g sugar
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 1 lemon(s), grated peel
  • 2 eggs

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

Yeast dough pastries

Mix the flour with the teaspoon of sugar in a bowl. Heat the milk to lukewarm and dissolve the yeast in it. Add the yeast milk to the flour and mix with a little of the flour. Let the pre-dough rise until it has visibly increased in size. Knead the butter, sugar, salt, vanilla sugar, lemon zest, and eggs into the dough. Roll the dough out into a rectangle and cut into diamond shapes using a pastry wheel. Cut a slit in the center of the diamond shape and pull one end of the diamond through the slit. Fry the Raderkuchen in oil until golden brown and roll them in sugar. They taste best when lukewarm.
