Radicchio salad with Gorgonzola and croutons

Ingredients for 4 servings:

  • 1 head of radicchio
  • 100 g lamb’s lettuce
  • 250 g grapes, light, seedless
  • 100g Gorgonzola
  • 1 onion(s), red, finely chopped
  • 4 tbsp white wine vinegar
  • 5 tbsp oil, good
  • 2 tbsp currant jelly
  • 1 tsp mustard
  • Salt and pepper from the mill
  • some sugar
  • 5 toast bread
  • 2 tbsp Clarified butter or butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Clean the radicchio and lamb’s lettuce, then cut the radicchio into wide strips. Wash and halve the grapes. Crumble the cheese. For the dressing, combine the vinegar, jelly, mustard, and oil. Add the diced onion and mix. Season with salt, pepper, and sugar. Cut the bread into cubes and toast in the butter. Carefully mix the dressing with the lamb’s lettuce, radicchio, grapes, and Gorgonzola. Serve and sprinkle with the croutons.
