Radish and ham tartar on farmhouse bread

Ingredients for 4 servings:

  • 200 g white radish(s)
  • 2 tsp salt
  • 2 gherkins
  • 1 small red apple
  • 50 g ham, raw
  • ½ bunch parsley
  • 3 tbsp oil
  • 2 tbsp vinegar
  • 4 tbsp cream cheese with garlic
  • 2 tbsp butter
  • 4 slices of farmhouse bread
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Total time approx. 35 minutes

Coarsely grate the radish, mix with 2 teaspoons of salt, and let it sit for 15 minutes. Finely dice the gherkins and apple. Cut the ham into very fine strips. Chop the parsley, reserving a few leaves. Squeeze the radish well, season with oil, vinegar, and cream cheese, along with salt and pepper. Mix in the gherkins, apple, parsley, and ham. Serve on buttered farmhouse bread and garnish with parsley. A delicious, fresh spread that also makes a great appetizer.
