Radish – Apple – Cucumber – Salad

Ingredients for 4 servings:

  • 1 bunch of radishes
  • 1 cucumber(s)
  • 2 apples (e.g. Braeburn or Gala)
  • 250 g low-fat curd cheese
  • 1 tbsp parsley, chopped
  • some salt and pepper
  • ½ lemon(s), juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel, core, and dice the cucumber. Sprinkle with salt, let stand for about ten minutes, and then drain the cucumber juice. Peel, core, and dice the apples, and drizzle with lemon juice. Finely dice or slice the radishes. Mix everything with the quark, season with salt and pepper, and sprinkle with parsley. This salad pairs perfectly with grilled food and is the perfect “take-home” salad.
