Radish, cheese and sausage salad refined with chives

Ingredients for 6 servings:

  • 300 g mountain cheese in slices or in one piece
  • 500 g meat sausage or Lyoner, or both
  • 2 m.-large onion(s), red
  • 1 bunch of chives
  • 6 tbsp apple cider vinegar
  • 2 tbsp mustard, hot
  • 2 tbsp mustard (Bavarian mustard), sweet
  • 6 tbsp sunflower oil
  • 250 g white radish(s)
  • some salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour

Finely chop the cheese and sausage. Slice the onions into very thin rings. Cut the chives into very fine rolls. Combine the vinegar and both mustards in a bowl with a little salt and pepper. Stir in the oil. Add the cheese, sausage, half of the onions, and the chives and mix everything together. Marinate for half an hour. Then mix again and season with salt and pepper if desired. Peel the radish, slice it very thinly, season lightly with salt, and toss it into the salad just before serving. Sprinkle the remaining onion rings over the salad.
