Radish curry

Ingredients for 2 servings:

  • 2 large radishes, white
  • 1 garlic clove(s)
  • 3 onions
  • 2 beefsteak tomatoes
  • 50 g clarified butter
  • 2 tbsp curry powder
  • 1 tsp cumin
  • Pepper, freshly ground white
  • 1 tbsp ginger, grated, fresh
  • Salt
  • Soy sauce
  • 50 g cashew nuts
  • 150 g yogurt, cream
  • 1 tsp lemon juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Clean, peel, and wash the radishes, then cut into 3 cm long and 1 cm wide strips. Peel and finely dice the garlic and onion. Blanch the tomatoes, skin them, remove the stems, and chop the tomatoes. Melt the clarified butter in a saucepan. Sauté the curry, cumin, and pepper. Add the onion, garlic, and ginger and simmer for about 5 minutes. Add the radish, salt, and soy sauce and sauté for about 10 minutes until tender. Add the tomatoes, nuts, creamy yogurt, and lemon juice and simmer for another 2 minutes.
