Ingredients for 1 servings:

  • 200 g flour (almond flour press cake from oil extraction)
  • 200 g wheat gluten (gluten protein)
  • 300 ml water
  • 250 g low-fat curd cheese
  • 2 eggs
  • 25 g yeast
  • 40 g seeds (sesame, linseed, sunflower seeds)
  • 10 g salt (tomato salt)
  • 1 tsp bread spice mix
  • 1 tbsp tomato paste, or dried herbs

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours

Dukan, Sis and Low Carb suitable

Dissolve the yeast in water and knead with all the other ingredients until a smooth dough forms. Pour into a loaf pan lined with baking paper and let it rise in a warm place for 1 hour. Bake for 50 minutes at 175°C. If you don’t want to worry about the fat, you can use ground almonds. I prefer the press cake.
