Ingredients for 4 servings:

  • 200 g noodles (ramen)
  • 2 limes, juice only
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce, light
  • 1 mango(s), green, peeled, cut into fine strips
  • 2 carrots, cut into thin strips
  • 2 spring onions, finely sliced
  • 1 chili, red, pitted, finely chopped
  • 1 bunch basil (Thai basil), finely chopped
  • 50 g peanuts, salted, coarsely chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Noodle salad with Japanese ramen

Cook the noodles in salted water until just al dente, drain, and rinse under cold water. Combine the lime juice, sesame oil, and soy sauce in a bowl. Add the mango strips and all remaining ingredients, mix, and let stand for about 15 minutes. Then stir in the noodles.
