Ingredients for 4 servings:

  • 1 liter of fresh milk (whole milk, not UHT milk)
  • 2 lemon(s), the juice
  • 250 g sugar
  • 500 ml water
  • 1 tsp rose water

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Bring the milk to a boil in a saucepan, remove from the heat, and stir in the lemon juice to curdle the milk. Place the curds in a clean cloth and tie a tight knot. Squeeze firmly until no more water comes out. Let the mixture rest for 24 hours, then knead it with the cornstarch. Form into small balls. For the syrup, bring the water and sugar to a boil and reduce for about 5 minutes. Carefully add the cheese balls to the hot syrup and simmer gently for 15 minutes. Let everything cool, then add the rose water.
