Raspberry Dream
The perfect raspberry dream recipe with a picture and simple step-by-step instructions.
- 1 packet Frozen raspberries
- 1 packet Fresh raspberries
- 400 g Powdered sugar
- 5 Pc. Sprigs of mint
- 8 Pc. Eggs
- 3 cups Cream
- Raspberry spirit
- Lemon juice
- Preheat the oven to 100 degrees.
For the meringue:
- Separate the eggs. “Beat” the egg white with a pinch of salt using a mixer. Gradually add the powdered sugar with feeling. Add 2 to 3 drops of lemon juice and continue beating on the highest level for about 5 minutes.
- Put the mixture in a piping bag and place a little space on a baking sheet lined with baking paper. Put the baking sheet in the oven. After about 45 minutes, turn back to 75 degrees and let dry for 45 minutes. Remove the meringue and let it cool.
For layers:
- Finely chop the mint, whip the cream. Have 5 glasses or bowls ready. These should be at least 250 ml in size.
- Now crumble the meringue into the glasses so that the base is covered. Put a layer of frozen raspberries on top, sprinkle with mint and drizzle a few drops of raspberry brandy on top. Top up with a layer of cream. Continue the layering principle until the glasses are full. Finish with a layer of cream. Let it steep in the refrigerator for 2-3 hours. The raspberries thaw, the layers combine and become a delicious cream.
To serve:
- Put fresh raspberries on the cream and decorate with a leaf of mint. I recommend a gin and tonic for dessert. With its slightly bitter taste, it rounds off the dessert perfectly.
