Raspberry dressing

Ingredients for 2 servings:

  • 125 g raspberries, passed through a sieve
  • 50 g strawberries, pureed
  • 2 tbsp raspberry vinegar
  • 4 tbsp grape seed oil
  • 1 tsp pepper berries, pink, pink
  • 1 tsp peppercorns, green
  • sugar or honey

Working time approx. 10 minutes; Total time approx. 10 minutes

Quick, light, summery salad dressing

Crush the peppercorns (red and green) in a mortar. Then, combine the pureed strawberries and strained raspberries with the oil, vinegar, pepper, and sugar or honey in a blender until the dressing forms a smooth consistency. Adjust the sugar/honey to your liking. It should be slightly sweet and tart. You could even add a dash of strawberry syrup. This dressing goes perfectly with leaf salads with feta cheese and pieces of strawberries or watermelon, along with fried chicken breast or beef strips. Serve with a baked potato with sour cream for a delicious, light summer dish.
