Raspberry mascarpone cream with chocolate and cantuccini

Ingredients for 1 servings:

  • 100 g dark chocolate
  • 3 tbsp almonds, chopped
  • 100 g cantuccini
  • 250 g mascarpone
  • 500 g low-fat curd cheese
  • 2 tbsp, heaped sugar
  • 2 packets of vanilla sugar
  • 150 ml whipped cream
  • 250 g raspberries, frozen

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

A sweet dessert

Roughly chop the chocolate and biscuits. Chop the almonds as well, unless purchased already chopped. Whisk the mascarpone, quark, sugar, and vanilla sugar until smooth. Whip the cream until stiff and fold into the cream. Fold in the chocolate, biscuits, and almonds, leaving a few for decoration. Fold in the raspberries as well, but don’t overbeat, or everything will turn pink. Sprinkle the cream with the remaining chocolate, almonds, and biscuits.
