Raspberry Mascarpone Dessert

Ingredients for 6 servings:

  • 400 ml cream
  • 500 g mascarpone
  • 450 g raspberries (frozen)
  • 500 ml apple juice
  • 1 packet of pudding powder (vanilla flavor)
  • e.g. vanilla sugar
  • e.g. lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

super quick dessert, easy to prepare

Whip the cream until almost stiff, add the mascarpone, and mix. Season with vanilla sugar and lemon juice (not too sweet, remember the raspberries!). Prepare the pudding according to the instructions, but use apple juice instead of milk. Add the raspberries to the boiling pudding, bring to a boil briefly, and stir with a large spoon, otherwise the raspberries will fall apart. Let cool slightly. In a baking dish or 6-8 small bowls, start with a layer of cream, then layer the raspberries and cream alternately.
