Ingredients for 8 servings:
- 500 g mascarpone
- 250 g raspberries, frozen
- 100 g sugar
- 30 g powdered sugar
- 3 eggs, fresh
- 60 ml coffee
- 1 pack of ladyfingers

The refreshing alternative for summer
Separate the eggs into two separate bowls. Whisk the granulated sugar and egg yolks until creamy, then add the mascarpone. Mix everything thoroughly. Beat the egg whites until stiff, then carefully fold them in. Next, take a cake tin (important: WITH a base) and start with a layer of ladyfingers and sprinkle them with a little coffee. Then arrange a few raspberries on top, sift a little powdered sugar over them, and then cover everything with a layer of cream. Then start again with the ladyfingers… and so on. Finish with a layer of cream and then decorate this with a few raspberries. If you like, you can also decorate the tiramisu with a little bitter cocoa powder. The tiramisu tastes best when not served immediately after making it, but left to stand in the refrigerator overnight.
