Raspberry – Vanilla – Jam

Ingredients for 1 servings:

  • 1 ½ kg raspberries, fresh or frozen
  • 2 vanilla pods, the pulp
  • 1 packet of gelling sugar (3:1)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Rinse the raspberries and place them in a large saucepan with the gelling sugar (defrost frozen raspberries first). Mix everything well. Scrape the seeds from the vanilla pods and add them (use 1 or 2, depending on your taste). Bring everything to a boil over high heat while stirring and simmer for at least 3 minutes. Fill prepared jars to the brim with the hot mixture. Seal, turn upside down, and let stand with the lid on for about 5-10 minutes. Be careful—the jars will be very hot! I always make exactly enough for 7 small 230 ml jars.
