Ingredients for 4 servings:

  • 3 tbsp oil
  • 250 g minced meat
  • 2 onions
  • 2 bell peppers
  • 2 small eggplants
  • 2 zucchinis
  • ¼ liter broth
  • 500 g tomatoes from the can
  • 1 garlic clove(s)
  • salt and pepper
  • Thyme
  • oregano
  • Paprika powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the onions, bell peppers, eggplant, and zucchini. Heat the oil and fry the ground beef until lightly browned. Add the vegetables and sauté. Pour in the broth and add the tomatoes (canned with liquid). Sauté for 10-15 minutes. Crush the garlic and add. Season with salt, pepper, thyme, oregano, and paprika to taste. Let everything simmer for 30-40 minutes. We serve it with rice. It also freezes well.
