Raw Brussels sprout salad with feta, onions and mustard dressing

Ingredients for 4 servings:

  • 1 bag of Brussels sprouts, approx. 750 g
  • 2 packs of feta cheese, approx. 200 g each
  • 2 onions, red
  • 2 tbsp mustard, sweet
  • 2 tbsp mustard, medium hot
  • 1 garlic clove(s)
  • 2 tbsp balsamic vinegar
  • 1 cup of cream, approx. 200 g
  • 2 tbsp currant jelly

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

This unusual salad uses raw Brussels sprouts. Clean, wash, and chop the sprouts into small pieces. Dice the feta, garlic, and onion. Mix everything in a bowl. For the dressing, combine the mustard, salt, pepper, balsamic vinegar, and cream, then stir in the redcurrant jelly or your favorite jam. Toss the salad with the dressing and let it sit for half an hour. Tip: For a spicy kick, add a splash of Tabasco, and for olive lovers like me, add a handful of olives as a topping. A salad seed mix also works well and adds a little crunch.
