Red bell peppers

Ingredients for 4 servings:

  • 250 g onion(s), diced
  • 2 garlic cloves, chopped
  • 2 chili peppers, red, pitted and diced
  • 1 kg red bell pepper(s), cut into slightly thicker strips
  • 1 large can of tomatoes, diced, drained
  • olive oil
  • Salt
  • Pepper, freshly ground
  • 2 bay leaves
  • 1 small can of tomato paste
  • e.g. oregano
  • n. B. Thyme

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the onions, garlic, chili, and bay leaves in olive oil. Add the bell pepper, season with salt and pepper, and cook for about 5 minutes, stirring occasionally. Stir in the tomato pieces and tomato paste. Cover the pan and simmer for about 30 minutes. Season with herbs, if desired, just before the end of cooking. This makes a delicious side dish, but also tastes great with spaghetti.
