Ingredients for 1 servings:

  • 500 g strawberries
  • 250 g currants, red
  • 250 g gooseberries, red
  • 1 lemon(s), juice
  • 1 tsp citric acid
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 4 minutes; Total time approx. 1 hour 9 minutes

Strawberries, currants and gooseberries

Wash, trim, and weigh the fruit. Purée the fruit with the remaining ingredients in a tall saucepan and let stand for 1 hour. Bring to a boil and simmer for about 4 minutes, then test for settling. While still hot, pour the jam into screw-top jars, seal tightly, and immediately turn the jars upside down for a few minutes. Then, turn the jars upside down and let them cool completely.
