Ingredients for 4 servings:

  • 500 g red cabbage
  • 80 g onion(s)
  • 2 tbsp oil (sunflower oil)
  • 150 ml apple juice, naturally cloudy
  • ½ tsp sea salt
  • ¾ tbsp thyme, fresh, chopped
  • 150 g apples, sour
  • 2 tbsp dark raisins
  • 15 g butter or margarine
  • 2 tbsp vinegar (raspberry vinegar)
  • 1 tbsp water

sophisticated variation of the classic

Wash and trim the cabbage. Quarter the head and cut into fine strips, removing the stalk. Roughly dice the onions and sauté in the oil with 1 tablespoon of water until translucent. Add the apple juice, ½ teaspoon of salt, the red cabbage, and the thyme. Cover and simmer over low heat for about 15 minutes until just soft. Stir once. Wash, quarter, core, and slice the apples. Mix the apples and raisins into the vegetables. Sauté for about 7 more minutes (the cabbage should remain crunchy). Stir in the butter and season the vegetables with the vinegar. Tip: If you can’t find fresh thyme, you can also use 1 1/2 teaspoons of dried thyme.
