Red cabbage and fig salad

Ingredients for 4 servings:

  • 500 g red cabbage
  • 3 figs, fresh
  • some olive oil
  • 1 tbsp salt
  • 1 tbsp sugar
  • 3 oranges
  • 1 tbsp walnuts, chopped
  • 10 tbsp Balsamic vinegar, lighter
  • 10 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp sesame seeds
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Total time approx. 40 minutes

Thinly slice the figs and drizzle with a little olive oil. Remove the stalk from the red cabbage and cut or shred into fine strips. Sprinkle with salt and sugar, knead thoroughly for 5 minutes, then let stand for 20 minutes. Squeeze the juice of 2 oranges and mix well with honey, sesame seeds, balsamic vinegar, and olive oil. Season with salt and pepper to taste. Mix half of the dressing into the red cabbage. Peel the remaining orange and cut into small segments. Arrange the red cabbage on a platter, arrange the figs and oranges on top. Drizzle with the remaining dressing and sprinkle with a few chopped walnuts. Serve the salad immediately. Approx. 270 kcal per serving.
