Red cabbage chef's style

Ingredients for 4 servings:

  • 50 g goose fat
  • 2 onions, 80 g
  • 1,000 g red cabbage, from the can
  • 1 tbsp flour, 10 g
  • 250 ml red wine
  • 250 ml meat broth, hot, from cubes
  • 1 pinch(s) cinnamon powder
  • 1 pinch of salt
  • 1 tsp sugar
  • 2 tbsp vinegar or lemon juice
  • 125 g bacon, fresh, lean
  • 125 g apple sauce, from the jar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

With red wine and cinnamon, goes well with game and roast goose

Heat goose fat in a saucepan. Peel onions and thinly slice. Sauté in the goose fat for 3 minutes. Add red cabbage. Sprinkle flour over the onions while stirring. Add meat broth and red wine. Season with salt, cinnamon, sugar, and vinegar (lemon juice is better). Add bacon. Cook for 40 minutes. Remove bacon and dice. Mix with applesauce and cabbage.
